These four appetizers are so quick and easy. You could literally have all four of these appies down within a half an hour.

#1 Chicken Raspberry

#2 Turkey Pomegranate

# 3 Smoked Salmon

# 4 Beef and Brie

All the ingredients may be bought at most markets/grocery stores. I personally love Super Store, as their prices are reasonable, quality is good and of course, they have a large selection of time-saving products.

#1 Chicken Raspberry

1 package of pre-cooked chicken strips, found in the deli section usually about 200 g

1 pint of fresh raspberries set aside ½ for garnish

2 stalks of celery chopped fine

¼+ cup “Hellmann’s” Mayo (this will be about preference, some like it creamier others not)

Salt and white pepper to taste

1 baguette, white or whole wheat or both cut thinly into circles. Thick enough to be solid to hold your filling.

Prep time 10 minutes

Cut your chicken into small pieces, a little bigger than a pea. Toss in a bowl, add your celery and raspberries. Start off with ½ the Hellmann’s and add to the desired creaminess you desire. You may not use all of the ¼ cup called for or you may use a bit more. The raspberries should be chunky not beaten up.

Take a small fork full of the mixture and place it on-top of your baguette slice. Top with an upside down raspberry. MMMMMM so good. The filling is great for a sandwich on its own.

#2 Turkey Pomegranate

1 pkg pre-cooked turkey slices usually around 200 g

2 pkg pomegranates seeds found in your pre-bagged salad area. (Usually only available for Christmas. Costco also carries these in a 4 pack)

2 stalks celery chopped fine

¼ cup “Hellmann’s” Mayo

Salt and white pepper to taste

1 baguette thinly sliced into circles can use white or whole wheat or both

Prep time 10 minutes

Chop you turkey into small pea size pieces. Toss into bowl

Add to that bowl 1 pkg of the pomegranates

Then add the celery and ½ of the mayo

Mix and season. At this point you may or may not want to add more mayo, it will depend on your preference for how creamy you want it. Its easier to add more than to take away so add bit by bit until you reach desired consistency.

Take a small fork full and place on the baguette slice. Top with pomegranate seeds from your second pkg and serve. People will love these for their freshness and crunch.

# 3 Smoked Salmon

1 pkg peppercorn smoked salmon tips(the weight will vary because of number and size of pieces in pkg)

4 green onions finely chopped (set half aside for garnish)

¼ + cup “Hellmann’s Mayo

Fresh dill for garnish

Prep time 10 minutes

Peel the skin from the piece of Salmon and place in a bowl, with a gloved hand mash the salmon up until fine. Add ½ your green onions and ½ your mayo. This should have a rich creamy texture. You may use all of your 1/4 cup of mayo and possible more especially if you make this ahead, as it tends to absorb the mayo.

Fork onto a cracker or a baguette slice. Top with a sprig of Dill

This can be served on a dill cracker or a baguette.

# 4 Beef and Brie

Entire prep time 15 minutes

¼ cup Hellmann’s Mayo

3 heaping tablespoons creamy horseradish

 

1 pkg cooked sirloin strips usually in 200g pkg

1 wheel of brie

Parsley sprigs for garnish(optional)

 

1 baguette cut into thin circular slices

Preheat your oven to 350 degrees and line two cookie sheets with parchment paper

Spread on each baguette slice, the horseradish spread, place a piece of sirloin beef on-top of the spread, cutting it to fit the length if necessary.

Cut your brie as if cutting a pie into slices, of course, thinner about ¼ inch at its thickest and lay that on top of your beef.

Continue building these either until all beef is used or counting on 2 per guest.

Placing onto a parchment papered cookies sheet and bake for about 10 minutes or until cheese has fully melted over the beef.

Serve hot, as is or with a sprig of parsley
